Broccoli and cheese soup is one of the easiest cheese-based recipes you can make. It only requires a few ingredients and you’re able to whip it up from beginning to end in about 30 minutes or less. Think of it as a bowl of creamy comfort that’ll warm you up and feed your soul.


To start, you’ll need to grill up some white onions in butter. For a regular serving of soup for about four people, this requires just one onion. Melt the butter, cook the onion and then add a bit of garlic to taste. Whisk in ⅓ cup of flour to get that ultra velvety consistency.


Now, slowly mix in 2 cups of chicken stock along with 3 cups of half-and-half. Mix slowly on medium to low heat to ensure it all gets cooked in together at the right speed and temperature. Season to taste with whatever you’d like (salt, pepper, etc.) then let it thicken for about 5 minutes while stirring occasionally.


Add in two large chopped carrots, one pound of broccoli florets and let it simmer for 20 minutes before adding the cheese...a whole 2 cups of sharp cheddar to be exact. Perform a quick taste test, add in anything you feel is missing to suit your tastes and serve! It’s best with bread for dipping.

Loaded grilled cheese sandwiches are the best. It’s as if you took a Chuck E. Cheese pizza and mixed it in with a traditional grilled cheese sandwich and then threw on some bacon, mac and cheese, and other tasty toppings. And, the best part is that you can make it “loaded” with literally whatever you like. It’s up to you! But, our recipe calls for homemade mac and cheese.


That’s right, forget about the Chuck E. Cheese pizzas, this one’s topped with delicious mac and cheese. We’re drooling already. You can opt to use baked mac and cheese or just traditional for this recipe, it’s up to you according to your flavour preferences.


Follow whatever your favourite recipe is for mac and cheese and then pour it into an 8-inch square baking dish. Cover the dish and refrigerate for about an hour or until the macaroni and cheese is firm enough to cut. Then, cut it into small squares.


Preheat a griddle or a stovetop pan that’ll allow you to somewhat simulate a grilling effect. Place each square of mac and cheese on top of a piece of bread, then layer on additional slices of your favourite cheese (American, cheddar or Monterey jack seem to work best). Add a slice of bacon to each square and griddle it up until they’re all golden brown. 


Want it more loaded? You can add other ingredients such as brisket, tomatoes, hot sauce or even veggies if you’d like. Once you’ve mastered the basics of getting the mac and cheese between the slice of bread to grill, you can top it with whatever you think will kick the flavour factor up a notch.

Mini cheesecakes are a great way to make desserts for a party or a small gathering of friends. And, it uses one of everybody’s favourite cheeses...Philly cheese! 


To cut down on time we suggest searching for mini graham cracker crusts at your local grocery store. You’ll often find them in the baking aisle as most places nowadays sell the mini crusts along with the bigger ones. If you can’t find them, it’s okay to purchase a larger crust, break it up together and form mini crusts yourself.


Now, you’re going to beat three packages (8 oz.) of Philadelphia cream cheese together with 1 teaspoon of vanilla and 2 tablespoons of sugar. After it’s well blended, add in 3 eggs, slowly and one at a time. Once it’s nice and creamy, spoon the mixture into the mini pie crusts. 


Refrigerate for 2 hours or until firm and serve! Making your own Philly cheese-based cheesecakes has never been easier. You can top with whipped cream and blueberries if you’d like, or serve plain.
